Coconut Shrimp with Cajun Twist

Ingredients

  • 1 yellow onion, halved
  • 3 garlic cloves
  • 20 g fresh ginger, peeled
  • 1 tbsp The French Longhorn Cajun seasoning
  • 1 tbsp coconut oil
  • 400 g coconut milk
  • 50 g tomato paste
  • 1 tbsp soy sauce (salty)
  • 15 fresh parsley leaves, chopped (or coriander)
  • A pinch of salt
  • 500 g cooked, peeled shrimp
  • Thai rice (for serving)

Instructions

Step 1: Prepare the Aromatic Base

  1. Finely chop the onion, garlic, and ginger.
  2. Heat coconut oil in a large pan over medium heat.
  3. Add the chopped onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
  4. Stir in The French Longhorn Cajun seasoning and cook for another minute.

Step 2: Make the Sauce

  1. Add coconut milk, tomato paste, soy sauce, parsley (or coriander), and a pinch of salt.
  2. Stir well and simmer for 5 minutes.

Step 3: Marinate the Shrimp

  1. Let the sauce cool slightly, then add the shrimp and coat them well.
  2. Cover and refrigerate for 1 hour.

Step 4: Final Cooking

  1. Reheat the shrimp and sauce gently over medium-low heat for about 10 minutes, stirring occasionally.

Step 5: Serve

  1. Serve hot with Thai rice or your favorite side.
