Coconut Shrimp with Cajun Twist
Ingredients
- 1 yellow onion, halved
- 3 garlic cloves
- 20 g fresh ginger, peeled
- 1 tbsp The French Longhorn Cajun seasoning
- 1 tbsp coconut oil
- 400 g coconut milk
- 50 g tomato paste
- 1 tbsp soy sauce (salty)
- 15 fresh parsley leaves, chopped (or coriander)
- A pinch of salt
- 500 g cooked, peeled shrimp
- Thai rice (for serving)
Instructions
Step 1: Prepare the Aromatic Base
- Finely chop the onion, garlic, and ginger.
- Heat coconut oil in a large pan over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
- Stir in The French Longhorn Cajun seasoning and cook for another minute.
Step 2: Make the Sauce
- Add coconut milk, tomato paste, soy sauce, parsley (or coriander), and a pinch of salt.
- Stir well and simmer for 5 minutes.
Step 3: Marinate the Shrimp
- Let the sauce cool slightly, then add the shrimp and coat them well.
- Cover and refrigerate for 1 hour.
Step 4: Final Cooking
- Reheat the shrimp and sauce gently over medium-low heat for about 10 minutes, stirring occasionally.
Step 5: Serve
- Serve hot with Thai rice or your favorite side.
